Chicken Supreme Casserole

  • 4c cooked, diced chicken
  • 1 can cream of chicken soup
  • 1 cup mayo
  • 2 T lemon juice
  • 1/2 t salt
  • 1/4 t pepper
  • 1 c chopped celery
  • 1 small diced onion
  • 1 can water chestnuts, drained
  • Crushed crackers or Rice Krispies
  1. Preheat oven to 425.
  2. Mix all ingredients, put in 9x13 pan.
  3. Sprinkle top of casserole with crushed crackers or Rice Krispies.
  4. Bake for 20 minutes covered.
  5. Cook it uncovered for a few more minutes to brown the top.

*I've also seen this recipe using sour cream instead of mayo.
