Balsamic Chicken & Mushrooms for 2

  • 1/4c Balsamic vinegar
  • 1 T Dijon mustard
  • 1 T minced garlic
  • 2 boneless chicken breasts
  • 8oz sliced fresh mushrooms
  • 1/2c chicken broth
  • 1/4 tsp dried thyme
  • olive oil
  1. Pound chicken to 1/4 inch thickness.
  2. Mix vinegar, garlic, & mustard. Coat chicken with mixture.
  3. In non-stick skillet, saute` chicken in oil over medium heat, 3 minutes on each side (until done.)
  4. Remove chicken from pan, keep warm.
  5. Saute` mushrooms in same pan for 2 minutes.
  6. Add broth & thyme. Cook until browned.
  7. Pour mushroom sauce over chicken.

Serve with: Steamed rice & veggie.
