Summertime Gazpacho

  • 2 cups corn, fresh or frozen
  • 4 cups tomato juice
  • 1 cucumber, peeled, seeded and cubed
  • 2 ripe avocados, peeled and cubed
  • 4 tablespoons fresh lime or lemon juice
  • 1 large garlic clove, minced
  • 1 1/2 teaspoons ground (toasted) cumin
  • 1/4 teaspoons cayenne
  • salt to taste
  • 1 bell pepper, minced
  • 1 teaspoon honey
  • 4 scallions, minced
  • 1 teaspoon tarragon (or 1 T. fresh chopped tarragon)
  • 1 teaspoon basil (or 1 T. fresh chopped basil)

Combine and chill.
