- 1/4c Balsamic vinegar
- 1 T Dijon mustard
- 1 T minced garlic
- 2 boneless chicken breasts
- 8oz sliced fresh mushrooms
- 1/2c chicken broth
- 1/4 tsp dried thyme
- olive oil
- Pound chicken to 1/4 inch thickness.
- Mix vinegar, garlic, & mustard. Coat chicken with mixture.
- In non-stick skillet, saute` chicken in oil over medium heat, 3 minutes on each side (until done.)
- Remove chicken from pan, keep warm.
- Saute` mushrooms in same pan for 2 minutes.
- Add broth & thyme. Cook until browned.
- Pour mushroom sauce over chicken.
Serve with: Steamed rice & veggie.
