- 1/4 Cup (1/2 stick) butter, divided
- 1/4 Cup all purpose flour
- 1 Cup Milk
- 1/2 lb (8 oz) Velveeta pasteurized prepared cheese, cut into 1/2 inch cubes
- 2 Cups elbow macaroni, cooked and drained*
- 1/2 Cup Kraft shredded Cheddar Cheese
- 1/2 Cup crushed Ritz Crackers
- Preheat oven to 350F. Melt 3 Tbsp. of butter in medium saucepan over low heat.
- Add flour and mix well. Cook 2 minutes, stirring constantly
- Gradually add milk, stirring until well blended.
- Cook on medium heat until mixture boils and thickens, stir constantly.
- Add Velveeta and cook until melted, stirring frequently
- Add macaroni and mix lightly
- Spoon into greased 2 qt casserole dish; sprinkle with shredded cheddar. Melt remaining 1 Tbsp. butter; toss with Ritz crumbs and sprinkle on top.
- Bake 20 minutes or until heated through
