- 1/2 cup of butter at room temperature
- 1 cup sugar
- 1 egg
- 1 cup mashed bananas (2 1/2 to 3 large bananas)
- 1 tsp baking soda
- 2 cups flour
- pinch of salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 1/2 cup chocolate chips
- 1 cup oatmeal
- Preheat oven to 350 degrees.
- Cream butter and sugar together until light and fluffy.
- Add the egg and continue to beat.
- In a separate bowl mix the bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which will give the cookies their lift and rise.
- Mix the banana mixture in with the butter mixture.
- In another bowl mix together the flour, salt, cinnamon and nutmeg and then slowly sift it into the banana/butter mixture. Beat until just combined.
- Fold into the batter the chocolate chips and the oatmeal.
- Drop in dollops onto cookie sheet and bake for 11-13 minutes or until golden brown.
- Let cool on wire racks.
Makes about 30 cookies.
