- 2 cups corn, fresh or frozen
- 4 cups tomato juice
- 1 cucumber, peeled, seeded and cubed
- 2 ripe avocados, peeled and cubed
- 4 tablespoons fresh lime or lemon juice
- 1 large garlic clove, minced
- 1 1/2 teaspoons ground (toasted) cumin
- 1/4 teaspoons cayenne
- salt to taste
- 1 bell pepper, minced
- 1 teaspoon honey
- 4 scallions, minced
- 1 teaspoon tarragon (or 1 T. fresh chopped tarragon)
- 1 teaspoon basil (or 1 T. fresh chopped basil)
Combine and chill.
