- 4c cooked, diced chicken
- 1 can cream of chicken soup
- 1 cup mayo
- 2 T lemon juice
- 1/2 t salt
- 1/4 t pepper
- 1 c chopped celery
- 1 small diced onion
- 1 can water chestnuts, drained
- Crushed crackers or Rice Krispies
- Preheat oven to 425.
- Mix all ingredients, put in 9x13 pan.
- Sprinkle top of casserole with crushed crackers or Rice Krispies.
- Bake for 20 minutes covered.
- Cook it uncovered for a few more minutes to brown the top.
*I've also seen this recipe using sour cream instead of mayo.
